Prep: Wash and slice Mushroom Manna Series fresh lion's mane. Wash and slice tomatoes. Wash and slice potatoes, wash and slice onions, garlic, and fresh parsley, thyme. Grate 500g of old cheddar cheese.
Cook: Make a white sauce and add cheddar cheese, finely chopped onions, garlic, parsley, thyme, salt and pepper to taste in a large pot. Add only the sliced mushrooms and potatoes to sauce.
Ready: Grease a baking dish with olive oil. Pour sauce mixture in dish. Top with tomatoes, grated cheddar and gluten-free bread crumbs
Bake: Cover dish with foil and place in hot oven at 385 F for 30 minutes. Uncover and further bake for 20 minutes. Remove when golden brown, and serve after resting for 5 minutes.
